Most instruments give you a single offset. Sailing errors are not single offsets: a masthead unit reads differently on port and starboard, and a paddlewheel reads differently at 15° of heel than upright.
Heading, apparent wind angle and apparent wind speed each get a correction curve rather than one number, with adjustable damping per reading.
